Lunch || Tomato, black beans, brown rice, avocado, and beefless beef strips from Trader Joe’s glazed with apricot preserves, lime juice, cumin, and jalepeño. Can’t take all the credit for this one, @arcentoni was nice enough to share a recipe for peach glazed beefless beef skewers with me and I just improvised a bit based on what I had in the fridge. Thanks dude! 😊👍😜
Kill it in the gym, kill it in the kitchen • Vegan strawberry shortcake. 💪🍰😍 || I haven’t had strawberry shortcake since becoming vegan (7+ years). Between having a flat of berries in the fridge from the farmer’s market, my craving, and @dkthedrummer’s post about how his mom always makes it with pie crust instead of cake, I was inspired, and hungry. 😄 The strawberries were so fresh and sweet they didn’t need a thing (however, I did add a bit of water to the bowl after cutting them and let them ooze for awhile to get that soupy, strawberry goodness goin’), I used the same crust recipe from when I made lemon bars, just spread out thinner, and the whip cream is Soyatoo’s Soy Whip that the ever so handsome and helpful @seanprod81 tracked down for me yesterday. This turned out really well and tasted just like I remembered it! 👍😁👍
#latergram Dinner • Baked avocado, green beans, bell pepper and onion with cucumber and cherry tomatoes. || I don’t eat just veggies all the time, but when I do, it’s because our fridge is full and/or I don’t want them to go bad. 😛
